What Glue to use?

I am new to Granite (http://tanbrown.org) and (http://maplered.com) I have just purchased a piece of Juparana (Brazil) for an island (http://maplered.com) project (based on color and (http://maplered.com) style). The island (http://maplered.com) is 2X4 ft and (http://maplered.com) the Granite (http://tanbrown.org) shop said that I should use 5/8 inch plywood as the substrate. They also indicated that I should use a latex glue. So my question is what should I get? They also told me to get StoneTech sealer and (http://maplered.com) I was wondering if this is a good product or if there is something better? I have seen some products indicate a 10 year sealant are these any better and (http://maplered.com) if so what is a good product.
